Cultured Fruit Compost (all ingredients should be Organic/toxic/chemical free)

Recipe

2 Asian Pears (peeled and chopped)

1 Pint Blueberries

½ bushel of cilantro (chopped fine)

2 tsp of air-dried salt*

Juice of 2 limes

Rind of ½ a lemon (preferably meyer when in season) sliced

½ cup raisins (sulfite free)

½ cup purified water

¼ cup liquid whey* (for culturing)

Place all ingredients in 2 quart size jar, leave at least 1 inch of room from top of jar. Seal tightly and place in warm place for 2 – 3 days to allow the culturing process to occur then place in refrigerator. Will last up to 2 mos.  What you will get is a sweet and tangy fruit mixture to add to homemade Kefir, Yogurt or to eat on its own filled with probiotics and is a natural digestive agent.
